NY Cheesecake#

Original recipe: Kwestia Smaku (PL lang)

OG recipe for 25cm diameter round pan here, I used 34x24cm so I must have multiplied proportions by 1.5 or 1.6 then

Ingredients#

DOUGH:

  • 300g butter cookies (used Matcha Pocky that was nearing expiry)

  • 5og butter

CHEESE BATTER:

  • 250 g sugar

  • 6 eggs + 5 yolks

  • 1,25kg philadelphia-style cream cheese

  • 3 teaspoons vanilla extract

  • juice from 1/2 lemon

Preparation#

  1. Line the baking pan with parchment paper

  2. Blitz the cookies and mix with melted butter, spread evenly over the pan, put in the fridge.

  3. Place a baking tray on the bottom shelf of the oven and fill it 2/3 full with hot water. Place a metal cheesecake rack in the middle of the oven. Preheat the oven to 180 degrees C (top and bottom, no fan).

  4. Mix everything together with a mixer for at least 2mins.

  5. Pour the batter over the dough.

  6. Bake for 70mins, trn off the heat, rest in the oven for 10 minutes, open the door and let it rest for 10 mins like that.

  7. Rest even more, and then putin the fridge.

Makes/Notes#

  1. Made one 30 Sept 2022 with the Matcha Pocky, which imo went well with the cheese.
