Classic Brownies#

Original recipe: The Golden Book of Chocolate

1 20 x 20 cm pan, 18x18 is also ok

Ingredients#

  • Butter for the pan

  • 150g bitter chocolate, coarsely chopped

  • 180g unsalted butter, cut into pieces

  • 300g sugar

  • 3 large eggs

  • 1 teaspoons vanilla extract

  • 150g cup all-purpose flour

  • 1/4 teaspoon salt

  • 1 teaspoon baking powder

  • optional 100g (wal)nuts

Preparation#

  1. Preheat the oven to 180C.

  2. Line the pan with butter

  3. Mix flour, baking powder and salt

  4. Melt chocolate and butter in bain mairie and let cool

  5. Add sugar and whisk them well for a shiny crackled top, add eggs and vanilla

  6. Add kosher salt and flour mix and work the batter for 45 secs

  7. Bake for 25-30 mins, take out, cool and fridge for 1hr
