Garlic Lime Chicken#

Ingredients#
2 chicken breasts (recipe suggests searing whole breasts but usually i do stews with meat chopped into bite-sized chunks)
1 tablespoon olive oil
1/2 onion, chopped
2 garlic cloves
1/2 cup of stock
1/2 line - juice and zest
2 tablespoons paprika
3 tablespoons 18% sour cream
salt and pepper
OPTIONAL 1/4 jalapeno pepper,grated
OPTIONAL 1/2 teaspoon crushed red pepper (maybe replace with spicy paprika?)
OPTIONAL 2 tablespoons cilantro (or other “fresh green herb” if you hate cilantro with a burning passion)
Preparation#
Season meat w salt and pepper
Heat a big pan with oil on medium heat, and sear the meat for 3-5 mins or until no longer pink on any side
Take out the meat, fry onion, garlic (and jalapeno) for 2-3 mins
Add all the other ingredients besides chicken and cream, stir (maybe blend for smooth consistency if you care)
Add the meat back to the pan, simmer in sauce for 7-8 minutes (or shorter if the pieces are small, if the breasts are whole, turn once or twice).
Stir in the cream making sure it doesn’t clump, simmer 1-2 minutes, serve warm.
