Garlic Lime Chicken#

Ingredients#

  • 2 chicken breasts (recipe suggests searing whole breasts but usually i do stews with meat chopped into bite-sized chunks)

  • 1 tablespoon olive oil

  • 1/2 onion, chopped

  • 2 garlic cloves

  • 1/2 cup of stock

  • 1/2 line - juice and zest

  • 2 tablespoons paprika

  • 3 tablespoons 18% sour cream

  • salt and pepper

  • OPTIONAL 1/4 jalapeno pepper,grated

  • OPTIONAL 1/2 teaspoon crushed red pepper (maybe replace with spicy paprika?)

  • OPTIONAL 2 tablespoons cilantro (or other “fresh green herb” if you hate cilantro with a burning passion)

Preparation#

  1. Season meat w salt and pepper

  2. Heat a big pan with oil on medium heat, and sear the meat for 3-5 mins or until no longer pink on any side

  3. Take out the meat, fry onion, garlic (and jalapeno) for 2-3 mins

  4. Add all the other ingredients besides chicken and cream, stir (maybe blend for smooth consistency if you care)

  5. Add the meat back to the pan, simmer in sauce for 7-8 minutes (or shorter if the pieces are small, if the breasts are whole, turn once or twice).

  6. Stir in the cream making sure it doesn’t clump, simmer 1-2 minutes, serve warm.
